Cooking Corner - Cottage Cheese Pancakes

Anna Misner is a young wife and mother and cooks primarily for herself and her husband Kevin, occasionally making meals for friends and family as well. She stays busy caring for her new baby and preparing for summertime when Kevin will be working long hours on lawns through their business Perfection Lawn Services. Anna does a lot of the secretarial work, keeping everything running smoothly for the business. She recently started planning her menus, something that should help her feel on top of dinners during the upcoming busy summer. She enjoys discovering good new recipes; ones that turn out and taste good.
Cooking began for Anna at 12 years old, helping her mom out often with meal preparation. Her favorite meals to prepare back then were anything that came in a box, with clearly printed directions and little extra work. She became a bit more adventurous as she grew older and on one family camping trip, Anna decided to experiment with macaroni and cheese in a slow cooker. Laughing, she mentioned "it doesn't work." The end result was what her younger siblings referred to as "cheese paste". Her cooking style has undergone significant reconstruction since Kevin "hates anything boxed." These days she says her cooking usually takes some time to prepare. The Misner's favorite meals usually include a combination of meat and potatoes, fruits, vegetables, and whole grains. She tries to steer clear of refined sugars in their diet, using sucanat, honey, or maple syrup as alternatives. One cookbook she turns to frequently for good recipes reflecting these principles is "The Two Sisters Cookbook" by Danielle and Lindsay Voeller.
