When trying to decide what to feature this month, many recipes, ideas, and specific foods came to mind. It's difficult to choose just one thing since so many things are at their season's peak right now. I thought about a blueberry crumble or a peach pie or even some sort of fresh vegetable stir-fry or omelet. Instead I opted to piece together an easy and delicious menu for four, designed for those who enjoy hearty breakfasts.
Breakfast foods are delicious, but there never seems to be enough time to make and savor them in the busy early summer mornings when work must be attended to. Don't hesitate to try this breakfast menu for a fun summer dinner, or serve it for a lazy day brunch, adding a side of slow-roasted fingerling potatoes. If everything is prepared ahead of time, it can be an enjoyable make-your-own meal to serve to guests, especially if you throw in additional ingredients to allow personalization and creativity with both the sandwiches and parfaits. For the sandwiches, you could offer two choices of bread, a variety of cheeses, spreads, and vegetables. For the parfaits, vary the fruits and nuts and include a dish of granola, along with sweet sauces such as chocolate and caramel for those who like it.
