Cooking Corner - Daniel's Potatoes

It's hard for me to believe that summer and Father's Day are just around the corner! It seems like spring took its sweet time arriving, but now that it has, the warm weather and plant growth has been phenomenal. As this will be my husband's first Father's Day as a father, I decided to write this particularly in honor of him and one of his favorite foods: The potato.
Daniel is wonderful to live with. He's easy to cook for, works very hard, both at his job and around the home, and he's an excellent daddy to his baby girl. If I want to treat Daniel with food, some sort of potato dish (but particularly fried) is sure to make him happy. He absolutely loves them. I've made many potato dishes (from twice-baked to Potatoes Anna), and though he enjoys most of them, his fall-back-on favorites are hash browns and oven-fried wedges. I enjoy making the oven fries for him, and they're so simple, healthy and tasty. I always marvel at the number of potatoes that can be consumed when they're cooked this way. I always figure one to two potatoes per person, but with this method, I usually end up doing three or four-which really may mean the quantity doesn't end up being quite so healthy. Daniel likes any type of potato cooked this way, and he enjoys having ketchup with them as well. Oven fries are also very convenient. I only really have to handle them twice-once when preparing them and once when placing them in a serving dish. I like to start them at the beginning of my dinner prep, get them in the oven, and then finish my other prep and cooking while they bake and broil.
