Cooking Corner - Homemade Mayonnaise with Olive Oil

Chocolate syrup was the first recipe Judy Misner ever attempted. It was a 4-H cooking class home assignment, and for young Judy it ended in disappointment, tears, and thoughts of never wanting to cook again. Her mistake was a cup of salt instead of sugar! She did continue with the home economic classes 4-H offered and she was soon making (and eating) all kinds of desserts. She became overweight in her childhood and was somewhat sickly, developing a kidney infection at just eight years of age and was then given much penicillin. Since that rough introduction to cooking and health, Judy has learned and changed on many levels.
Judy grew up on her father's farm where life was always busy. Her mother rarely allowed her in the kitchen as things needed to get done and there was little time for patience and instruction. Eventually, as Judy learned to cook through 4-H and classes in school, she was allowed and welcomed in the kitchen. By junior high she was making a large meal for the farmers once a day during the summer. With her high school years came more home economic classes and an introduction to nutrition. She was a good student and put into practice much of what she learned, changing her eating habits and exercising regularly. She didn't have much spare time for exercise so she incorporated it into her day, "If I needed to go somewhere (on the farm), I ran." Consequently, the summer before her junior year, she lost between twenty and thirty pounds. She was on the right track to her health, but looking back she says, "It still wasn't the total answer."
