Cooking Corner - Potato Tomato Casserole

The vegetables available at this time of year are some of the most comforting ones around. This is chiefly true of the humble potato. I suppose the vegetable in and of itself isn't particularly comforting, but when it takes on the form of succulent stews, well-paired roasts, seasoned mashes, and a wide variety of sides, potatoes bring great satisfaction. I find this to be especially true during these crisp autumn days when I've pulled out my warmest socks and thickest sweater in attempt to ward off that chill that pervades the air, too stubborn to turn the heat on since it's only September.
Back in June I wrote an article about potatoes that addressed their storage, preparation, nutrients, and available varieties. I would like to revisit the potato, only this time from the vantage point of its cookery.
