Cooking Corner - Basic Stock (Broth)

Here I am, writing another article after taking a few months off to bond with my new son and adjust to life as a mother of two. My relationship with food and nutritional viewpoint has changed a fair amount since you last heard from me. As a result of a series of events including our daughter's chronic health issues, a 3-day hospital stay with our newborn son, and a kind word of advice from a concerned friend, my husband and I have read about and decided to follow the GAPS "diet" for at least a couple of years with the goal of healing our intestinal lining and thereby preventing disease.
When the diet was first presented to me I thought it sounded crazy. And I still think it's a little crazy, no, more like extreme. After all, no grains are allowed, only a handful of legumes are permissible, and the only forms of sweetener utilized are honey and dried fruit. I didn't quite see how the diet was necessary for MY family anyway. We seemed to be digesting our food all right and we weren't doubled over in intestinal pain or anything. I didn't want to flatly dismiss the idea without first looking into it though.
